SNACK TIME!

So I've really taken an interest in baking since Taylor and I got our new place. Ok, maybe not extreme baking (I´m not there just yet) but I LOVE trying out new recipes. Yes some aren't good, but some are AMAZING! It's a chance you take when you see something and say "that looks good!"

With all the health crazes going on I thought I would try a nice after work out snack, or just a reason to have a little treat! I had a ton of bananas to use up so instead of falling into temptation for my delicious banana bread (I'll share that too, lets just wait to have a cheat day) I thought I would make these. If anybody knows me, I absolutely love peanut butter - like I´m obsessed!! It´s not out of my daily routine to be sitting in the pantry with a spoon and the peanut butter jar in my hand. Taylor still after 6 years of being together, doesn´t understand my obsession. But you can maybe tell, I like it ;) So naturally both these recipes have peanut butter in them, hehe!



First one is probably my favorite out of the two, Peanut Butter Banana Ice Cream Sandwich!!! With no dairy or added sugar!! Its soooo easy - here´s what you do:

Peanut Butter Banana Ice Cream Sandwiches

Prep List:

- 2 ripe bananas
- 2 tbsp of Crunch Peanut Butter (I used the light - and also added probably another tablespoon, but if you want it to be equal flavor of banana and peanut butter, keep it to 2 tablespoons)
- 24 Graham Crackers
- Tin Foil

Directions:

- Put bananas and peanut butter in a bowl and mash together with a folk under smooth and blended
- Rip about 12 pieces of Tin foil and lay them each out
- Lay out 2 graham crackers per piece of tin foil
- Scoop out banana and peanut butter mix with a spoon, place about a table spoon on 1 piece of graham cracker
- Do this for each set and then place the other graham cracker on top of it. Press down lightly but dont squish it all the way down!
- Wrap each little sandwich with the tin foil and place in the freezer (I stacked them on top of each other, very gently)
- Freeze for about 2-4 hours before you indulge!!

SNACK AWAY!! They are so good to satisfy your sweet tooth





No Bake Chocolate Peanut Butter Balls

Prep List:

- 1 cup rolled oats
- 1 ripe banana
- 4 tbsp peanut butter (I used the light one)
- 1 tbsp cocoa powder
- 1 tsp vanilla
- drizzle of organic honey (the recipe calls for sweetener but I used honey instead, because danger is my middle name...haha)
- Wax paper

Directions:

- Mix everything in a medium sized bowl with a mixer.
- Take a tablespoon of the mixture, roll into a little ball and place on the wax paper. I like to push it down just a tad like a peanut butter cookie
- Do that until all the mixture is used up
- Put in the fridge for about 1-2 hours to chill
